Cut the butter into small pieces and melt in a water bath. Cool a little. Break the eggs and separate the yolks from the proteins. Add the remaining sugar to the yolks and rub thoroughly. When the dough is suitable, add the chilled melted butter and the yolks crushed with sugar to it. Mix well.

Sift the remaining flour and gently add in small portions to the dough along with warmed milk. Knead the dough thoroughly so that it does not form lumps. Then cover the dough with a towel and place in a warm place to let it come. After the dough has risen, gently mix it and leave it to fit a second time.

Add salt to the egg whites and beat with a mixer until an air mass forms. Gently introduce whipped proteins into the dough that has come up and leave the dough to rise a third time. Do not mix the dough that has approached.
