Juicy, fragrant bright oranges are valuable not only as tasty and healthy fruits, but also as a source of zest, which has been widely used in the industrial production of gourmet liquors and confectionery. At home, you can cook a very delicate, incredibly tasty and original jam from orange peels in the form of curls.

After eating an orange, do not rush to throw the remaining crusts into the bin: dried and crushed with a coffee grinder into powder, they can be successfully used as a natural flavoring for baking cookies or muffins; small dry slices of zest are added to the tea leaves to flavor tea; the infusion of the peel helps scare away the ants, but fresh raw materials are used to prepare an unusually beautiful jam from orange peels.

For jam, you need three large oranges, thoroughly washed with hot water and scalded with boiling water. Fruits are cut in half, after which each half is cut into separate slices and peeled. Classic recipes require an additional 3-day soaking of crusts with a regular change of water - this will eliminate excessive bitterness and give extra softness to the workpieces.

After soaking, the loose white layer is removed from the inside of the orange peel and each strip is carefully folded into a tight spiral. Finished spirals are tightly strung on a strong thread, like a bead, filled with cold water and boiled for 15-20 minutes, after which the water is drained and the cooking process is repeated 3 more times. After each drain, it is recommended to rinse the orange peel in cold water.

Then, in a wide pan, syrup is prepared: about a half a kilo of boiled orange peels takes about 750 g of sugar and 250 ml of water. The "beads" from the peel are dipped in sugar syrup and brought to a boil over low heat and boiled for about 20-30 minutes. After this, the jam is removed from the heat, allowed to cool and the cooking process is repeated, after boiling, adding the juice of half a lemon.

After the orange peel jam has completely cooled, the threads are removed from the curls and transferred to a dry clean jar.
