Mold is a mushroom coating that has a different structure and color. It usually develops on food. Numerous cells that gather in the threads are just such a composition in mold. Very often it appears on bread, it happens that people continue to eat it, only by removing the infected area. This should not be done categorically, since the mold strings hidden from the naked eye also spread inside the seemingly harmless bread.

Mold infection process

Mold and the disputes it produces surround people everywhere. They infect bread during transportation - through polluted air, vehicles, as well as the hands and outer clothing of staff. Struck by spores, bread is placed at home in a closed bread box, often right in a plastic bag, without even realizing that they create the perfect microclimate for the growth of mold.

Russian scientists have confirmed that in urban air, dangerous molds contain significantly more than the maximum permissible concentration.

The appearance of mold

Mold on bread can be seen when storage is not observed: high temperature (25 ° C - 40 ° C) and humidity above 70%. The process of mold development is caused by mycelial fungi - “aspergillus”, “penicilli” and “mucoric”. First they spread on the surface of the bread, and then they hit the crumb.

The strings of mushrooms penetrate the entire space in their path and destroy it with secreted enzymes. Under their action, hydrolysis of proteins, fats and starch occurs. It is the products of these reactions that give the unpleasant smell and taste to bread. Mold spores can form “mycotoxins, ” which are very harmful to human health. Therefore, moldy bread is unsuitable for eating.

Mold spreads very quickly, although it itself is not dangerous. The harm is concentrated in the disputes it emits, which people inhale with air. When mold spores get into the blood and respiratory systems of a person, he becomes ill.

Scientific experiments have proved that mold contains a large number of allergenic, toxic and carcinogenic compounds, which, when accumulated in the body, affect the liver and kidneys.
