Put a cube of butter (from the total amount) in a pan, melt it over medium heat. Put apples in butter and simmer, stirring gently, for 5 minutes. Then add brown sugar and cinnamon, keep on the stove until the sugar has completely dispersed. Remove from the burner and allow to cool.

To work with the dough, prepare a towel moistened with water to cover the filo layers: the thin dough dries instantly! Dissolve the butter in a water bath or microwave. Lubricate with a brush a detachable shape with a diameter of 16 cm.

Grease a layer of dough with butter and put it on the bottom of the mold so that the edges remain outside. Sprinkle lightly with white sugar and cover with another layer, turning it 90 degrees, which is also greased with butter and sprinkled with sugar … Repeat 4 times. Cover the 4th layer with apple filling and continue to spread the layers of dough until they end, smearing each layer with butter and sprinkling with sugar.

Pick up the hanging edges and cover them with a pie. Do not press! The cake should look like a crumpled piece of paper. Lightly top with butter and sprinkle with sugar again. Send in an oven preheated to 190 degrees for 25 minutes: the top of the baking should become golden. Pull out the finished cake only when it has completely cooled.
