Shortcrust pastry is very delicate and crumbly. From it you can cook almost any pastry. Curd cake is just one of many options. It is prepared very simply and quickly, and the result will not leave anyone indifferent.

- flour - 1 glass;

- eggs - 2 pcs;

- butter (margarine) -100 g;

- soda on the tip of a knife;

- sugar - 1/2 cup.

For filling:

- cottage cheese 9% - 250 g;

- sugar - 3 tbsp. l;

- egg - 1 pc;

- vanilla sugar - 1/2 sachet.

First, knead the dough, for this we separate the yolks from two eggs and grind them with melted margarine or butter. In the resulting mixture, add sugar and soda, quenched with vinegar or lemon juice, mix everything thoroughly.

Sift the flour through a sieve, pour into the prepared mixture and knead a cool dough. We remove it in the refrigerator for 1-1.5 hours.

While the dough is cooling, prepare the filling: we pass the cottage cheese through a sieve or knead with a fork until smooth. In a bowl with cottage cheese, add one egg yolk, granulated sugar and vanilla sugar, mix with a mixer until smooth. We put egg whites in the refrigerator for about half an hour.

The baking dish (deep pan) is greased with butter. We spread the dough in the form so that it completely covers the bottom, and along the edges there are sides. Preheat the oven to 190-200 degrees, bake the base for the cake for about 15 minutes.

We fill the baked base with a mass of cottage cheese. Beat the cooled proteins with a mixer with 1 tbsp. l sugar and a pinch of salt. It should be a strong lush foam. Pour the resulting mixture with the cake and put in the oven for 3-5 minutes, so that the proteins harden and slightly brown. If desired, the cake can be decorated with fruits, berries or grated chocolate.
