  • - flour - 200 g;

  • - sugar - 50 g;

  • - egg yolks - 2 pcs;

  • - sour cream - 1 tablespoon;

  • - zest of half a lemon;

  • - baking powder for dough - 0.5 teaspoon;

  • - salt - a pinch;

  • - butter - 120 g.
  • For filling:

  • - plum - 700 g;

  • - low fat cottage cheese - 500 g;

  • - egg whites - 2 pcs;

  • - egg yolks - 2 pcs;

  • - starch - 1 tablespoon;

  • - butter - 50 g;

  • - sugar - 100 g;

  • - apricot confiture - 50 g.

The first thing to do is prepare the dough for the future plum cake. To do this, combine softened butter, sour cream and granulated sugar. Beat the mixture. Then add lemon zest and egg yolks to it. Enter the second gradually. Mix flour with salt and baking powder for dough, pass through a sieve and add to the bulk. Knead the dough and place it in the cold for about half an hour.

Cover a round baking dish with a diameter of approximately 25 centimeters, cover with a sheet of parchment and place the chilled dough on it. Roll it out and shape for the pie side. Also, do not forget to chop the dough in several places with a fork. Rinse the plum thoroughly, cut into halves and remove the seeds. Put two-thirds of all fruits in a mold.

It's time to cook the filling. To do this, mix the egg yolks, pre-melted butter, starch, granulated sugar and cottage cheese. Mix everything thoroughly, and then introduce beaten egg whites to the resulting mass.

Place the resulting curd filling on the dough. Garnish with the remaining plums on top. Only first cut them with longitudinal cuts and unfold them like a fan. Then warm the apricot confiture and grease the fruit with it.

Preheat the oven to a temperature of 180 degrees and place the dish in it. Cook it for 70 minutes. You can decorate ready-made pastries, for example, with powdered sugar. Plum pie with cottage cheese is ready!
