To prepare it, we need 2 small eggplants, 2 medium-sized onions, 2 garlic cloves, 2 boiled eggs, 2 potatoes, pre-cooked, mayonnaise or better sour cream for dressing - 5-6 tablespoons (it may take even more if the salad seems dry), a little vegetable oil for frying, salt and pepper.

Eggplant, as you know, has a not very pleasant property of bittering, especially if it is not young. You can simply cut off the peel from it or cut and soak in salt water for half an hour (per liter of water, a tablespoon of salt).

Fry our eggplants with onions, cut in half rings in a small amount of vegetable oil for 15-20 minutes. Cut the garlic - you can julienne or thin slices. After the eggplants are ready, turn off the heat, add the garlic, close the lid and leave. Cut potatoes and eggs into cubes. We take a beautiful salad bowl, put the cooled eggplant with onions and garlic, add eggs, potatoes, salt, if necessary, and pepper to taste. We season our salad with mayonnaise or sour cream. Put the plate with the prepared dish in the refrigerator for a short time, the salad will be tastier if it is saturated with all the juices.
