  • For salad:

  • - rice - 100 g;

  • - carrots - 1 pc.;

  • - onions - 1 pc.;

  • - canned corn - 100 g;

  • - cherry tomatoes - 5 pcs.;

  • - olive oil - 50 ml;

  • - parsley or other herbs - 1 bunch;

  • - spices, salt, pepper - to taste.

  • To decorate the salad:

  • - carrots - 1 pc.;

  • - salt - to taste;

  • - toothpick - 1 pc.;

  • - vinegar - 2 tbsp. l

In this salad, it is best to use long-grain rice, since it sticks together the least and does not boil. Sort the rice well, clean it of impurities, then rinse and transfer to a saucepan, pour warm water and cook over low heat until cooked.

Wash the onions, peel, pour over boiling water, and then cut into small pieces. Onions are poured with boiling water in order to remove excess bitterness. Wash the carrots, peel and grate on a coarse grater. Used greens (parsley or cilantro) must be washed and finely chopped.

Combine greens, carrots, rice, onions and corn in a salad bowl, salt and add olive oil, and then mix well.

Go in for tomatoes: cherry is the best choice. Cut the small tomatoes into 4 parts, but add to the salad last.

The undoubted highlight of this salad is the "chrysanthemum" used for decoration. To do this, take the carrots, peel it, and then make an oblique cut from the thick edge. Next, you need to separate 8 thin plates, each of which needs to be cut along the center, and make semicircular cuts on the opposite sides.

Take a toothpick, overlap the folded plates of carrots so that you get the petals of chrysanthemum. In the center, chop a corn kernel.
