After exhausting physical work or a long forced walk in bad weather, I want to quickly return to the hospitable arms of my native kitchen and try something hearty and hot. A rich soup with the affectionate name "Garlic" will help to replenish lost calories, keep warm and not get sick.

You will need

  • - 1.5 liters chicken broth

  • - 50 g smoked bacon with bacon

  • - 4 medium sized potatoes

  • - 1 onion

  • - 10 cloves of garlic

  • - 1 tsp dried thyme

  • - 1 egg

  • - half a roll of rye bread

  • - vegetable oil

  • - green onions,

  • - parsley

  • - salt

If there is no ready-made chicken broth, boil the chicken (whole or half - at your discretion) with seasoning and roots (carrots, onions) in a two-liter pan for 1-2 hours, let the broth stand and take out the meat. Without meat, you’ll get about 1.5 liters of broth (maybe even 1.7).

Cut the bacon with bacon into small cubes and fry in a pan for 3-5 minutes. Put on a plate or paper towel. In the remaining fat mixed with vegetable oil, fry the potatoes, also chopped into small cubes.

When the color of the potato turns golden, add the grated onions to the roasting. Pass the garlic through a press or mash to a mushy state and mix in a separate bowl with dried thyme.

Heat the broth, add the potatoes with onions and garlic, and cook for 7-10 minutes until the potatoes are soft. At this time, cut the bread into cubes and fry with salt until golden-red.

Shake the contents of the egg and 100 g of water. Stirring the soup, pour the mixture, bring to a boil and remove from heat. Before serving, decorate the soup plates with cubes of fried bacon, croutons and fresh herbs (parsley, green onions).

Smoked garlic soup is contraindicated for people with chronic diseases of the stomach (ulcer, gastritis with increased secretion of gastric juice in the acute phase, etc.).

Useful advice

In order not to waste time roasting bread, you can buy ready-toasted croutons (without adding flavorings and extra spices).
