"Raspberry baskets" are made from shortcrust pastry. Incredibly delicate, soft and tasty cream is added to the finished sand baskets, and shortcakes are decorated with sweet raspberries and blueberries.

You will need

  • For the test:

  • - 1 tbsp. flour

  • - 3 eggs

  • - 4 tbsp. l butter

  • - 2 tbsp. l Sahara

  • - 2 th. l sour cream

  • - 1 pinch of salt
  • For cream:

  • - 120 ml. fat cream

  • - 5 tbsp. l powdered sugar

  • - 0.5 tsp gelatin

  • - 70 g raspberries

  • - 20-30 g blueberries

Heat the oil to room temperature, cut into medium pieces, and then mix with flour. Butter with flour can be put in a blender and grind the dough in this way.

Break the eggs into a bowl, add sugar, beat everything with a whisk until white, the mass should increase slightly in volume, and the sugar will completely dissolve. When the mass is ready, add sour cream and salt to it, whisk again a little.

Combine the first mass (flour with butter) and the second (eggs, sugar, salt and sour cream), knead a tight, tight dough for cakes, refrigerate for 10 minutes.

Take cupcakes or any other, grease them with butter. Put the dough in the molds, smooth on the edges and bottom with an even dense layer. Put the pastry molds in the cold for 15 minutes.

Preheat the oven to 180-200 degrees. Remove the baskets and put them in the oven for 10-12 minutes. After the baskets are ready, take them out and cover them with a newspaper and a towel. Leave to cool for 15-20 minutes.

Pour cold water into a saucepan, pour in gelatin, leave for 10 minutes. In a separate container, whip the cream with powdered sugar with a whisk, the mass should become sufficiently dense and grow in volume.

Put the pan with gelatin on a slow fire so that the gelatin melts when this happens, combine it with whipped cream, mix with a spoon. Put this cream into small baskets.

Sort raspberries and blueberries, rinse and dry. Put the berries in a cream. Send “Tartlets” cakes in the cold for 1 hour to cool the gelatin. Shortcakes are ready, now you can serve them to the table.

Useful advice

Together with blueberries and raspberries, you can add strawberries, kiwi, blackberries and other berries and fruits to the “baskets”.
