Preheat the oven to 160 degrees. Prepare the mold by greasing it with melted butter or simply lining it with parchment (baking) paper. If you bake in silicone, then it will be enough just to sprinkle it with water from the spray gun.

Cooking oil must be softened. Beat it in a lush light mass with the addition of powdered sugar. You can also use fine granulated sugar, but then beat a little longer so that the sugar is dispersed. Beat eggs into the oil mixture one at a time, each time thoroughly whipping.

Sift flour with baking powder and pour to the rest of the ingredients. Mix until smooth and add kefir. Pour into the prepared form, and lay the fresh gooseberries on top. Put in a hot oven for 50-55 minutes. Cool the finished cupcake and cut into portions. I recommend sprinkling sweet tooth with powdered sugar!
