In the Balkans, bell pepper is one of the favorite vegetables. Pepper dishes are usually simple, rich and tasty. Soups are cooked with it, it is fried and baked. Many dishes with this ingredient are in the Serbian national cuisine.

You will need

    • 500 g bell peppers;
    • 70 ml of olive oil;
    • 1/2 or 1/4 pods of hot pepper;
    • 5-6 cloves of garlic;
    • 1 tbsp vinegar
    • salt and sugar;
    • 70 g emmental cheese;
    • a sprig of basil;
    • dried paprika.

Cook the baked peppers in the marinade. To do this, take as fresh peppers as possible, preferably from the garden. To make the dish more beautiful, choose specimens of different colors - green, yellow, red. Wash the vegetables and cut in half. Use a sharp knife to cut the internal partitions and seeds. The peduncle can be left or removed, at your discretion.

Bake the peppers in the oven or in the microwave in grill mode. At the same time, it is advisable not to add oil to the baking sheet or limit it to the minimum amount so that the pepper does not stick. Keep it in the oven at 180 degrees for 7-10 minutes. It should become soft. Cool the prepared pepper a little and remove the peel from it. To facilitate the process, the vegetable can be placed hot in a plastic container with a lid and closed for several minutes. The peel can be easily removed.

Cut the prepared pepper into strips. Put it in a deep bowl and marinate. Chop the garlic very finely. To it add in the same way crushed red hot pepper. Note that the juice of this product is very caustic, and it is better to cut it with rubber gloves for the kitchen. Pour this mixture into pepper. Next, pour in the same olive oil. Add a little vinegar, preferably wine, and a pinch of salt and sugar. If desired, you can add chopped basil or a little dried paprika. Mix everything thoroughly. Put the lid on the finished dish in the refrigerator after the peppers have cooled. Keep them in the marinade for at least 3-4 hours before serving.

Such pepper can be served as a snack. In this case, it is advisable to sprinkle it with a small amount of fresh cheese, for example, emmental, right on the plate. This will soften the sharpness of the dish and give it an additional shade. Also, this dish can be a complement to meat. But it is desirable that the meat dish was fresh enough. Lean pork, chicken or turkey breasts will do.
