Their preparation is a real ritual, but no matter how successfully they are cooked, it is impossible to really feel and appreciate the taste of fried meat without vegetables. They can also be cooked on the grill, and while the meat is being fried, make a very tasty snack from them.

You will need

    • Tomatoes - 7 pieces;
    • Bulgarian peppers - 5 pieces;
    • Large eggplant - 2 pieces;
    • Large onions - 1 piece;
    • Green onion - 1 bunch;
    • Fresh greens - cilantro

    • Garlic 3-4 cloves;
    • Olive oil;
    • Salt

Wash tomatoes, peppers and eggplant in running cold water and pat dry with a paper towel. Grate each vegetable with olive oil, pouring it into the palm of your hand. Use a fork to chop them in several places and place them on the wire rack. Fry them for 20-30 minutes, turning over all the time.

When the vegetables are cooked, remove them from the grill and put them in a saucepan under a lid or in a plastic bag for 5-10 minutes to make them easier to clean.

Peel the vegetables. Remove the peel from the tomatoes and peppers, remove the stalks. Remove seeds and septum from peppers. Cut the tails of the eggplant, cut the skin with a sharp knife.

Peel and finely chop the onions, put them in a large bowl. Cut vegetables into small cubes, chop green onions and greens, finely chop the garlic with a knife. Put everything in a bowl, salt, pepper, pour olive oil.

If you are not outdoors, then cook at home. Wash, oil them and make punctures. Wrap each in a piece of foil, trying to keep it snug against their surface.

Preheat the oven to a temperature of 180-200 ° C, put the vegetables on the wire rack and fry for 30 minutes. Then turn off the oven and leave them to stand a little inside. Prepare a vegetable snack from them as described above. At home you will have the opportunity to cool it in the refrigerator - it will only make it tastier.

Useful advice

In the oven, you can bake grilled vegetables in foil using a mold on the bottom of which a layer of large sea or ordinary rock salt is poured. This allows you to bake them at the optimum temperature. Salt, of course, can be used repeatedly.
