Separate the yolks from the proteins in the eggs. Beat the egg yolks with sugar until light creamy. Pour the yolks into the dough and mix gently.

Next, whisk the proteins, add them to the dough and mix thoroughly. Thanks to proteins, the mass will become moist, soft and airy. However, it is best not to mix the dough for too long to preserve the oxygen added with the whipped proteins.
