White bread as a part of forcemeat is necessary so that juice does not leave the cutlets during frying. Moreover, bread should be soaked in water, and not in milk. Milk protein coagulates, and the patties are less juicy.

Useful advice

If you are worried that the cutlets will fall apart, add a raw egg to the minced chicken. But be aware that in this case cutlets will turn out to be less soft and juicy.
