The first recipe for chicken meatballs does not include the addition of mushrooms and other extraneous ingredients, so it’s great even for baby food. To begin, cut a couple of slices of white bread, put them in a bowl and pour fresh cow's milk, leave for fifteen minutes (so that the bread is softened). Then carefully squeeze the bread slices from the milk.

Then rinse the chicken thoroughly under running water, let it drain excess moisture or pat it with a cotton towel. Pass the chicken through a meat grinder. Add the squeezed bread from the milk into the resulting meat, salt and pepper to taste, again pass through the meat grinder. To the mass, add a couple of tablespoons of butter, mix. Next, you need to carefully form small meatballs from minced chicken, it is better to do this with slightly wet hands so that the meat does not stick to the palms. Roll the meatballs in pre-sifted flour, put in a frying pan heated with vegetable oil, fry on both sides until golden. Serve the meatballs with mashed potatoes or rice porridge.

The next recipe for cooking the meatballs will be with the addition of champignons. If you use chicken carcass rather than fillet for cooking meatballs, then you need to thoroughly wash the bird, cut the required amount of meat (without skin) from it and pass it through a meat grinder twice with bread soaked in milk. Wash and clean mushrooms (champignons) from debris and dark spots, finely chop and boil in salted water until tender.

Put the mushrooms in a frying pan with butter, add two tablespoons of sour cream, a little black pepper to them, simmer for fifteen to twenty minutes on low heat, cool. Salt and pepper minced chicken with bread, form small cakes with wet hands. In the middle of each such cake, put one tablespoon of mushroom filling (it is desirable that the filling is thick enough), connect the edges and roll the meatballs in ground breadcrumbs. Fry them in a well-heated skillet with butter. Boiled potatoes, steamed vegetables, canned green peas can be served on the side dish.

Experiment in the kitchen. You can use grated hard cheese, natural homemade cottage cheese with herbs, whole or chopped egg as a filling for chicken meatballs.
