  • - 2 apples;

  • - 2 egg whites;

  • - 50 g of sugar;

  • - 0.5 tsp cinnamon.

Mix flour with sugar and salt. Add slices of cold butter (it is better to cut it into small cubes and freeze it beforehand) and quickly grind everything with your hands to the state of crumbs. Add milk, quickly knead the dough, roll it into a bowl, wrap in cling film and put in the refrigerator for about 40 minutes.

Meanwhile, bake the apples in a microwave or oven until soft and puree using a blender. Add cinnamon and 3/4 of the total sugar to the applesauce. Beat with a blender again.

Beat the whites separately in a clean bowl until peaks. Add the remaining sugar and beat again to dissolve (you can also use powdered sugar).

Gently, using a spatula, mix the proteins and applesauce. Our mousse is ready!

Divide the dough into 6 parts and distribute it to the prepared tartlets. Send the oven to 200 degrees preheated by pouring beans onto the surface of the dough (baking method "with a load") so that the dough does not "rise" for a quarter of an hour.

Pull the basics out of the oven, remove the load, fill the tartlets with mousse and, if desired, garnish with apple slices. Send to the oven for another 40 minutes, lowering the temperature to 160 degrees.
