You will need
- For the test:
- - 100 gr. butter;
- - 200 gr. flour;
- - a pinch of salt;
- - 5 tablespoons of ice water.
- For filling:
- - 1 trout steak (or salmon);
- - 300 gr. spinach
- - 2 eggs;
- - 150 ml cream (35% fat content);
- - 100 gr. grated cheese;
- - a teaspoon of ground nutmeg (optional);
- - salt.

We prepare all the ingredients to be at hand.

Pour flour and butter sliced into slices onto a work surface, mix into crumbs and add ice water. Knead the dough.

We spread the dough in the form for muffins or muffins, put it in the refrigerator.

Trout (salmon) is separated from bones and skin, cut into strips.

Squeeze out the defrosted spinach so that the glass contains all the water, mix in a bowl with cream, eggs, grated cheese, nutmeg (optional) and salt.

We take out the form with the dough from the refrigerator. We twist the fish strips nicely to make a kind of rosette.

In the molds with the dough we spread the filling, until about the middle. Add a "rosette" of fish, gently squeeze it and pour a little more filling so that it reaches the edges of the molds.

Preheat the oven to 180C and bake baskets with trout for 50 minutes.
