You will need

  • - low-fat cottage cheese - 150 g;

  • - semolina - 75 g;

  • - wheat flour - 1 tablespoon;

  • - egg yolk - 1 pc.;

  • - lemon peel - 2 teaspoons;

  • - refined sugar - 3 pieces;

  • - apricots - 3 pcs.;

  • - butter - 2 tablespoons;

  • - granulated sugar - 1 tablespoon;

  • - breadcrumbs - 2 tablespoons;

  • - a pinch of cinnamon;

  • - salt.

Place the cottage cheese in a separate bowl. Pass it several times through a sieve to make it soft. Then add the following ingredients to it: egg yolk, grated lemon peel, semolina and two pinches of salt. Mix everything until smooth. Wrap the resulting dough with polyethylene or cling film and send to the cold for about half an hour.

Rinse the apricots thoroughly, and then remove the seeds from them. Then put a piece of refined sugar in each fruit.

Nip a small piece from the finished dough. Mash it with your hands so that a flat cake forms. Put fruit with sugar in its center. Gently fix the edges, and then form a ball. Do the same with the rest of the apricots.

Pour water into a large pot. Salt it slightly, then bring to a boil. As soon as this happens, dip the apricot dumplings into it. Their readiness to understand is simple - they will pop up.

Meanwhile, add the breadcrumbs to the pan with butter. Sauté them, stirring continuously. Once they turn golden, add granulated sugar and cinnamon to them. Mix everything thoroughly. The breading mixture is ready.

Remove the boiled balls from the dough from the water, then roll them in a breading mixture. Apricot dumplings are ready!
