Many housewives like to cook buckwheat for its unique taste and a lot of useful properties. But it is good not only in the form of a side dish and porridge. It also produces very tasty and nutritious first courses. For example, buckwheat is successfully combined with meatballs. Such buckwheat soup is served even in kindergartens, so children will certainly appreciate the food at its true value.

You will need

  • - minced meat (pork and beef) - 300 g;

  • - buckwheat groats - 4 tbsp. l with a slide;

  • - onions - 2 pcs.;

  • - small carrot - 1 pc.;

  • - potato - 3 pcs.;

  • - ground black pepper;

  • - salt;

  • - bay leaf - 2 pcs.;

  • - vegetable oil for frying.

Peel potatoes, onions and carrots and rinse under running water. Cut the potatoes into strips, grate the carrots, and chop the onion finely with a knife. Sort and rinse buckwheat.

Put the minced pork and beef in a bowl, add to it half the chopped onion, black ground pepper and salt to taste. Stir together and beat well. From the resulting mass, form small meatballs with a diameter of 2-3 cm.

Fill the pan with 2 liters of cold water and bring to a boil. After that, put the meatballs in it, bring it to a boil again and cook at a moderate temperature for 15 minutes.

While the meatballs are boiling, take a pan, heat it and pour in a little vegetable oil. Put the remaining onion and pass it until it becomes transparent. Add carrots to it and fry everything together for about 5 minutes.

When 15 minutes after boiling pass, put potatoes, buckwheat and onion-carrot fry in a saucepan to the meatballs. Bring to a boil again and cook the soup with meatballs and buckwheat for another 20 minutes. 5 minutes before the end of the time add salt, black pepper to taste and bay leaf.

Remove the finished soup from the stove and let it brew for 5-10 minutes. And then pour into portions and serve with chopped herbs, vegetable salad or pickles.
