Remove the foam. Put 2 peeled carrots, 1 head of onion, a couple of heads of leek, a stick of celery, a bay leaf and a few sprigs of thyme on 1 kg of meat. In a special bag or strainer for spices, dip a few anise stars, a couple of clove buds, 5-6 peppercorns into the broth. If you don’t have a bag or strainer, put spices in the broth just like that, but then do not forget to strain the broth. Cook the beef for about 2 hours until a piece of meat is pierced freely with a knife. Beef should be covered with broth all the time, do not forget to add hot water.

Serve boiled beef with sauce and vegetables. Such meat in a cold form is well suited for vegetable salads, sandwiches on whole grain bread.

Sauté small slices of beef in olive oil until golden brown if you want to cook a stew. Boil a chopped celery stalk and also chopped carrots in a pan. When the carrots become pumpkin, green beans and simmer another 15-20 minutes until cooked. To thicken the sauce, dissolve a tablespoon of corn starch in ¼ cup of water and add to the vegetables with meat. Warm everything together, stirring, another 3-5 minutes.
