  • - hard cheese (parmesan is ideal) - 200 grams;

  • - apples (sweet and sour) - 1 piece;

  • - pear - 1 piece;

  • - almond nut (fried, minced) - 1-2 tbsp. l.;

  • - yogurt (fruit or natural, you can use sour cream) - 2 tbsp. l.;

  • - mayonnaise - 40 grams;

  • - mustard (not sharp, granular) - 1 tbsp;

  • - lemon juice - 2 tbsp. l.;

  • - salt, sugar - to taste.

We spread the cheese on a chopping board and cut into strips about 2 to 3 centimeters in size and no more than 5 millimeters thick. To simplify the process, you can use a grater with large holes. We put the chopped cheese in the prepared dishes (salad bowl or deep plate).

Apple and pear, previously washed under running water, peel. Cut the fruit and peel the seeds, removing the core. After, cut into strips and put in a clean plate.

Next we take a lemon and use a knife to cut it into two halves. We need about 2 tablespoons of lemon juice, so squeeze any of the halves directly onto the fruit. All this is necessary so that the fruits do not darken and there is a pleasant background aroma.

We wash the almonds under running water and clean them of dirt. We put the nuts in a deep bowl and pour them with boiling water so that the peel would peel off. After 5 minutes, carefully drain the water and after they have cooled, we clear them of the peel. Then fry in a frying pan over medium heat until golden brown, with a spatula in a timely manner turning them over so as not to burn. After frying, grind with a mortar or knife until medium grinding or in a blender.

Next, you need to prepare a dressing of yogurt, mayonnaise, mustard, salt and sugar. Place all ingredients on a plate and stir until smooth. Give the sauce a little brew.

The salad is almost ready, it remains only to mix all the ingredients, season them with sauce and mix gently.

It is advisable to leave in a cool place for 10-20 minutes, so that the ingredients are saturated. But this is not necessary, the salad can be served immediately after cooking.
