    • 2 kg ripe tomatoes
    • 2 onions,
    • 2 tsp salt
    • 150 g sugar
    • 125 ml of wine or apple cider vinegar,
    • Spices: 1-2 cinnamon sticks
    • 5 clove buds
    • 1 teaspoon of black and allspice
    • 2 bay leaves
    • 1 sprig of rosemary
    • a slice of fresh ginger root
    • 1 pod of hot pepper.

To prepare both ketchup and tomato paste, you must first cook the tomato mass. Cut the tomatoes into pieces, remove the stalks. Cut the onion in half rings. Put tomatoes, onions, rosemary, bay leaves and a teaspoon of salt in a saucepan. Add a little water, put on a slow fire and bring to a boil. Simmer for about 20 minutes. Cool slightly and wipe the mixture through a sieve.

To obtain a tomato paste, boil the resulting tomato mass with intense boiling, stirring constantly. The mass should boil until the volume decreases by 2–2.5 times.

Cooking ketchup. Finely crush allspice and black pepper in a mortar. Add pepper, cinnamon, sugar, cloves, grated ginger to the mashed tomato mass. Put on fire and bring to a boil. Reduce the fire. Boil over very low heat for about 40 minutes.

Add wine vinegar, 1 pod of chopped hot pepper and simmer for another 10 minutes. Take out the cinnamon. Ketchup is ready.

Pour hot ketchup or tomato paste into pre-sterilized bottles or jars. Cover, dip in a pot of water heated to 70 degrees, and sterilize for 20-25 minutes. Cans and bottles should be immersed so that the water is 1 cm below the neck. Take out, tighten the covers. Cover with a warm towel and let cool slowly.

Since the tomato mass foams rapidly at the beginning of cooking, the pan should be filled no more than half the volume.

There are a huge number of different options for cooking ketchup. For example, with the addition of herbs or garlic. And if you add two or three pods of chili pepper, you get a real Mexican ketchup.
