You will need

  • - 250 ml of water

  • - 400 g flour

  • - 200 g butter

  • - 10 eggs

  • - 100 g almonds

  • - 100 g of powdered sugar

  • - 100 g sugar

  • - a pinch of salt

  • - pastry bag

Boil water in a small saucepan, add the butter, flour, sugar and salt melted in a pan. Switch to medium heat and stir the mass with a wooden spoon for 2-4 minutes, until the mixture turns yellow. When the mass begins to easily lag behind the edges of the pan - remove from heat and cool slightly.

When rubbing, add one egg to the dough, adjusting the density of the dough. Usually 6 eggs are enough, but more can be. Finally, if desired, you can add baking powder, but choux pastry rises well without it. The thickness of the dough should resemble a thick and fat homemade sour cream.

Place the prepared and chilled mass in a pastry bag and, squeezing it in a circular motion clockwise, put on a baking sheet oiled rings 10x6 cm greased with vegetable oil.

Bake in a preheated oven at a temperature of 230-250 degrees for 18-20 minutes. When the rings rise and brown, remove from the oven and sprinkle with grated almonds mixed with powdered sugar.

Orange sugar or lemon zest added to the dough (after the mass has been removed from the heat) will help to add to the rings of summer aroma.

Useful advice

Custard rings can also be decorated with bitter chocolate. Grate the chocolate or melt to an oily state, and then pour the rings with chocolate using a pastry syringe.
