200 grams of arugula, 2 bunches of parsley, 4 balls of mozzarella (125 grams each), 7 eggs, 300 grams of flour, 500 ml of milk, 8 tablespoons of vegetable oil, 500 grams of tomatoes, 1 teaspoon of balsamic vinegar, salt, ground black pepper.

Rinse arugula and parsley under running water, dry and chop. Peel the mozzarella from the brine film and cut into small cubes.

Beat eggs in foam. Heat the milk slightly and add to the eggs, add flour and mix. Then add arugula, parsley and mozzarella. Salt and pepper the dough.

Heat a small amount of vegetable oil in a pan and bake thin pancakes.
