Vegetable salads, one of the ingredients of which is celery root, are indispensable as a source of vitamins, especially in winter. This root crop is especially valuable in that it is able to preserve all its useful properties until spring. Salads with celery root will be an excellent prevention of vitamin deficiency and decorating your menu.

Beetroot, celery and apple salad

To make this salad you will need:

- 1 medium-sized raw beet;

- 150-200 g celery root;

- 1 medium carrot;

- 1 sweet apple;

- 2 tbsp olive oil;

- juice ½ lemon;

- 1 tsp mustard sauce;

- 1 tbsp light liquid honey;

- ground black pepper;

- fresh herbs;

- salt to taste.

Wash the beets, carrots and celery root, peel and grate everything on a coarse grater. Fold in a deep bowl. Peel and cut the apple into medium-sized cubes. Make a dressing. For her, squeeze the juice of half a lemon into a separate bowl and mix it with honey and olive oil until a homogeneous consistency. Salt, pepper the vegetables, pour them with dressing, mix and put in a salad bowl, sprinkled with fresh finely chopped herbs.

Celery and Orange Salad

For this vitamin salad, take:

- 4-5 young celery root;

- 1 large and sweet orange;

- 2 medium sweet and sour apples;

- 2 sweet bell peppers of different colors;

- 3 tablespoons low-calorie mayonnaise sauce;

- 3 tablespoons fat free sour cream;

- fresh herbs;

- ½ lemon;

- ground black pepper, salt - to taste.

Peel celery, peel apples and oranges. Cut celery into thin slices, apples into small slices. Disassemble the orange into slices and cut each crosswise into 6-8 pieces. Put everything in a bowl. With a peeler, remove the zest from the lemon and finely chop it. Squeeze the juice from the lemon and sprinkle with it the contents of the bowl, salt it, pepper, put the mayonnaise and sour cream, mix everything well. Cut bell pepper into rings of 2-2.5 cm wide. Put the resulting pepper cylinders on plates and fill them with a ready-made salad. Sprinkle the top with a lemon zest and a small amount of finely chopped fresh herbs.

This salad is especially combined with fish and poultry dishes.

Celery and Kiwi Salad

To prepare this exotic salad, which may well become the decoration of the festive table, you will need:

- 200 g celery root;

- 3 pcs. ripe kiwi;

- ½ cup cream with a fat content of 10%;

- 1 tbsp soy sauce;

- 2 tbsp cognac.

Make a salad dressing. To do this, whip the cream with a mixer or whisk, mixing them with soy sauce. Then pour this mixture into a small saucepan, add cognac to it, mix and set simmer on low heat until the contents of the pan are reduced by half. Do not boil the sauce, otherwise the cream may curdle. Remove the finished sauce from the stove, cover with a lid or a clean cloth and let it cool at room temperature.

To serve this salad you need to use a transparent glass salad bowl, this dish will look especially impressive in it.

Peel the celery root, gently peel the kiwi. Cut celery into thin slices and then chop into strips. Kiwi can be cut in half, and then with semicircular plates. Lay celery and kiwi layers, pouring each layer with creamy sauce. Top salad can be decorated with slices of kiwi and sprigs of fresh herbs, lettuce leaves.
