- 250 g of kefir;

- 200 g margarine;

- 2 lemons;

- baking powder;

- 300 g of sugar.

Grate cold margarine on a coarse grater or chop with a knife. To it add a small amount of sifted flour. As a result, you should get a small sand crumb. Transfer the mass to a deep container, add kefir and 1 tsp. baking powder.

Knead the smooth dough, divide it into two parts and form three balls. Put them in the refrigerator for half an hour. Take care of the filling at this time. Pour over lemons with boiling water, pass through a meat grinder and combine with sugar. Stir and leave the mass for 10 minutes.

If the filling turned out to be too liquid, put the first cake in the oven and bring to half-preparedness, and then form the cupcake to the end.

Preheat the oven. Roll out the pieces of dough separately, moisten the baking dish with water and put half of the dough in it. Put a layer of filling on it and cover it with the second part of the cake. Use a toothpick or fork to chop the top in several places. Bake at 190 ° C for 40 minutes.

To decorate the taste of the lemon cake, add nuts or raisins to it. Pour raisins with boiling water in advance and wait 2-3 minutes. After that, rinse it and dry it with a paper towel. To raisins evenly distributed in the dough, roll it in flour.

If you want to use nuts, it is better to pre-fry them in a pan or in the oven. It is necessary to remove the skin from almonds and pour peeled kernels with boiling water for several minutes. Grind the roasted nuts into crumbs and add to the cupcake.

In addition to nuts and raisins, you can add spices and dried fruits. Candied from lemon or orange peels are perfect in such a cupcake. They can be made independently or purchased in a store. Try to choose the best combination of products and add new ingredients slowly.
