Minced meat

Take 1 cup of rice, rinse with cold water until the water is clear, pour into boiling water and cook until half cooked. Next, you need to cool the rice, mix with 0.5 kilograms of minced meat, it is better to take pork and beef.

Add salt, pepper (to taste) and finely chopped greens (dill, parsley, celery) to the resulting mixture.

Cooking Tomato Puree

From fresh tomatoes you need to prepare mashed puree. You need to take tomatoes and pass through a machine, a juicer or an ordinary grater, to whom it is convenient. For 0.5 liters of mashed potatoes you need to add 30 grams (1 tablespoon) of sugar and 15 grams of salt (half a tablespoon). Add tomato paste (2 tablespoons diluted in a glass of water). Mashed potatoes are boiled in a saucepan so that the volume decreases by 1/3, at the end add a mixture of peppers (bitter, red, allspice) to taste.

Cooking Tomato Sauce

It is necessary to finely chop the bell pepper, lightly fry in sunflower oil, add grated carrot, onion on a coarse grater. Fry everything until golden brown and pour in tomato puree. Put out 2-3 minutes.

For this dish, we need medium-sized, not overripe fruits, because overripe eggplants have a bitter taste. First you need to pour cold water and leave for 20 minutes, then you need to thoroughly wash them, cut both ends, cut lengthwise to the center.

Next, the eggplant is fried in vegetable oil (not fried eggplant can be stuffed, but blanched, that is, dip them in boiling water for 5 minutes).

Then you need to cool and stuff. Stuff the fruits with minced meat sufficiently tightly, but carefully so as not to tear them. Stuffed eggplant must be folded tightly in a pan. Pour in tomato sauce, then add water to cover all the eggplants and simmer for 30 minutes over low heat (after boiling). Bon Appetit!
